2-3 Ripe bananas
1/4 cup coconut oil or butter
1/2 cup coconut or almond flour
1/4 cup walnuts (or any nut really) and/or cranberries
1 tsp baking soda
- Preheat oven to 400 degrees
- Whisk or blend all ingredients until as smooth as possible.
- Put into greased muffin tins or cake mold or bread mold or whatever.
- Bake for approximately 15-20 minutes until browned.
I also sometimes cooked it in a rice cooker. Run the regular “white rice” cycle two times.
