White bread at Bangsar Village

Hurrah! Unlike Daisy, I’m much too lazy at the moment to bake my own bread. This is why I celebrated with a glass of wine last week, my ability to pull sandwich bread out of the freezer, toast it and make myself a peanut butter and jelly sandwich. I’m loving this continued expansion of the gluten free aisle at Bangsar Village. Ener-G white bread…hurrah! Am off to make a cheesy toast now to help me make it through the rest of the twenty first year essays I have to grade.

Paleo “Bread” Recipe

Ingredients

5 eggs

2-3 Ripe bananas

1/4 cup coconut oil or butter

1/2 cup coconut or almond flour

1/4 cup walnuts (or any nut really) and/or cranberries

1 tsp baking soda

Method
  1. Preheat oven to 400 degrees
  2. Whisk or blend all ingredients until as smooth as possible.
  3. Put into greased muffin tins or cake mold or bread mold or whatever.
  4. Bake for approximately 15-20 minutes until browned.

I also sometimes cooked it in a rice cooker. Run the regular “white rice” cycle two times.
